QUICK-SERVICE RESTAURANT: SANITATION OF TOMATO SLICER

PURE worked directly with a quick-service restaurant to evaluate and improve sanitation throughout the establishment. The tomato slicer was identified as a particularly challenging piece of equipment to clean and sanitize. The slicer is meant to save time in produce preparation, however, disassembly and reassembly for cleaning and sanitizing was time consuming, not to mention the sharp blades made thorough sanitation a dangerous task. As a result, inadequate sanitation was a concern for this customer.

PURE compared cleanliness of the slicer, using criteria defined by the customer, following standard cleaning and sanitization to a new process that implemented application of PURE Hard Surface to the slicer after cleaning.

Results

PURE Hard Surface applied to the tomato slicer outperformed the standard cleaning and sanitizing practices and exceeded the acceptable cleanliness criteria set by the customer.
